Starting in Alice Costello in Piedmont in 1880 and continuing to Santhià in 1957 where the rice production began, the Bor farm has cultivated rice for decades. The family is also responsible for the award-winning recipe Vercelli Risotto.

Pietro contributed his beloved recipe for “Panissa” to our cookbook ‘Food From The Farm’ because it represents for him the roots of his family rice farm. Once a simple dish of rice and beans only, eaten during long and tiring working days, lard and salami were introduced later to enrich the recipe.
